Five Girls RAW

Over the past couple months five of my girlfriends have been doing a “60 day RAW food challenge” and filming a documentary about it (which is being co-produced by Pressed Juicery!). Yes, you heard me right- they’re eating NOTHING cooked for two solid months. I’ve been helping them out a bit on their project so needless to say their “diet” has been rubbing off on me. While I’m always a pretty healthy eater (gluten and mostly dairy free), I’ve been trying to get creative with some more uncooked foods. In honor of them I decided to ditch my usual baking and make a 100% raw dessert. People usually get scared about preparing gourmet raw food because it seems overly complicated and time consuming (don’t worry, the words “dehydrator” and “Irish Moss” terrify me too), but with a few simple ingredients you can make something that looks and tastes amazing in no time…
The proof is in the pudding- no pun intended.

Raw Coconut Cacao Pudding
meat of young coconuts (maybe 2-3? depends on how much you want to make, and how much is in each one- they vary)
few tbsp of raw cacao powder
couple tbsp raw organic honey
tsp raw ground vanilla bean
couple pinches of pink Himalayan sea salt
shredded coconut for decorating
*feel free to adjust any of these amounts depending on how much coconut you use
Blend everything together in a high powered blender until super creamy. Layer in a small glass with shredded coconut…
Chill and serve.
