Happy Leap Year!

Apparently on leap day it’s kosher for women to propose to their significant others. And in Finland, if he refuses, he must buy you enough fabric to make a skirt. Win-Win if you ask me.

Weekend Warrior

There’s nothing better than waking up on a Saturday morning and making a big homemade brunch. One of my favorite brunch foods are pancakes, but unfortunately I can never eat them in restaurants since they’re always made with wheat.

This weekend I made almond flour chocolate chip banana pancakes with vanilla whipped cream. Yes, very decadent- but once in a while you just have to live a little…

Almond Flour Banana Chocolate Chip Pancakes

1 1/2 cups almond flour

3 eggs

1/4 milk (I used almond milk)

splash of vanilla extract

2 Tbsp maple syrup

1/2 tsp baking soda

1/4 tsp salt

1 Tbsp cinnamon (optional)

Add ins: extra dark chocolate chips and banana slices ( you could nix these and do whatever add ins you want, or just make plain pancakes with none)

There are two ways to make these pancakes: you can either mix everything together in one bowl, OR you can separate the egg whites from the egg yolks, beat them, then fold them in after everything else is mixed together resulting in a fluffier pancake. If you choose to do the later, fold in the whites then stir in the chocolate chips.

Drop spoonfuls of batter onto a hot buttered pan (medium heat) and lay banana slices on top. Wait until bubbles form (3-4 mins), then flip. I made these pancakes pretty small so that they were easier to flip without breaking.

And after a big pancake brunch- a beautiful hike in the Palisades…

Sunday brought some Oscar party baking…

These were a variation of my crack cookies made with lots of cinnamon, walnuts, and raisins. Total hit.

Cinnamon Bun Muffins

I posted about these earlier and said I’d share the recipe, however this time I tweaked them and used coconut flour instead of almond flour- SO they are not exactly the same, but equally amazing. Using coconut flour seemed to give them a more authentic “muffin texture” and also looked a little prettier to photograph.

Coconut Flour Cinnamon Bun Muffins

Makes 8 muffins

1/2 cup coconut flour

1/4 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

4 eggs

1/3 cup yogurt (I used greek 2%, but will try with a non-dairy yogurt next time)

1/2 cup coconut sugar (syrup)

1 teaspoon vanilla extract

+ cinnamon topping (see below)

Cinnamon Topping/Filling

2 tablespoons butter

2 tablespoons cinnamon

4 tablespoons coconut sugar (I used the syrup the first time I made these, and then crystals this time- both worked)

Preheat oven to 350 F. Mix together the flour, baking soda, cinnamon, and salt, then add the wet ingredients. Blend until thoroughly combined and no flour clumps remain.

Melt together the ingredients for the topping/filling and set aside until needed.

Drop spoonfuls of batter into a lined muffin tin, then add some of the filling into each center. Cover with more batter, and then add the rest of the butter/cinnamon mixture on top.

I used a toothpick to swirl the topping around so that the flavor is evenly distributed.

Bake for 20-25 minutes.
